Jabaraize Kitchen, a dining space utilizing Kitayamamura's specialty citrus 'jabara,' has reopened seasonally this year next to the Kitayamamura Tourism Center, coinciding with the village's popular tourist rafting season. This year, the menu has been significantly enhanced to increase meal satisfaction, with a major expansion of rice-based offerings.

Previously focused on jabara-based drinks and light snacks, the kitchen received frequent requests from visitors last year for more substantial meal options. In response, the 2024 menu introduces new rice dishes such as the 'Jabara Karaage Don'—featuring the village's signature fried 'jabara karaage'—and an 'Onigiri Set,' designed to deliver both refreshing citrus flavor and full meal satisfaction.

The 'Onigiri Set' includes takikomi gohan (seasoned rice) cooked with jabara ponzu, paired with rice balls containing dried baby sardines (chirimen) and Wakayama-grown sansho pepper (grape pepper). This combination highlights the rich culinary identity of Wakayama Prefecture in a single meal. The refreshing taste of jabara and the aromatic sansho pepper stimulate the appetite during the warming months, making it ideal for outdoor adventurers and rafting tourists before or after their activities.

Additionally, this year marks the debut of game meat (jibie) dishes sourced from animals hunted in the surrounding forests of Kitayamamura. This unique culinary experience, rooted in the village's natural environment, offers visitors, families, and outdoor enthusiasts a new taste of local terroir.

Moving forward, Jabarise Kitayamamura Co., Ltd. will continue to refine its menu and services based on customer feedback, promoting the potential of 'jabara' and the gastronomic charm of Kitayamamura through seasonal and cultural initiatives.
