Katsuyama City Tourism Development Co., Ltd. (Location: Katsuyama City, Fukui Prefecture; Representative Director: Kazuhiko Miyazuka; commonly known as "Katsuyama DMO") has developed an original product, "Sake Lees Curry," which luxuriously uses sake lees from "Ippongi," a long-established sake brewery founded in Meiji 35 (1902) and operating for over 120 years. Sales commenced on April 25, 2026 (Saturday) at the Roadside Station "Dinosaur Valley Katsuyama." Development Background Katsuyama DMO promotes the development of original products in collaboration with producers who ship agricultural products to roadside stations and local businesses, with the aim of improving the local procurement rate (*) and effectively utilizing regional resources. "Sake Lees Curry" was born as part of this original product development project. *Local procurement rate: An indicator showing how much tourism consumption is returned to local employment and raw material procurement. ◆Scorched Rice Crackers (Salt/Soy Sauce): Scorched rice crackers made usingうるち米 (Uruchimai) and ancient rice, and green onions from producers who ship to our station. ◆Fire Breath Curry: A curry born from a collaboration between our station and the "Joloking" series of super-spicy spices, a product of the Izumi area of Ono City. ◆Green Onion Pepper: A seasoning made by upcycling off-spec green onions from Katsuyama. Product Overview The newly launched "Sake Lees Curry" is a special curry original to the roadside station, made with flavorful sake lees obtained only during the sake brewing season at "Ippongi," the only sake brewery in the city. In its development, instead of relying on the umami of meat, we pursued a deep richness and mellow flavor by carefully simmering sake lees and vegetables. We also repeatedly prototyped the balance of curry spices to maximize the richness and aroma of the sake lees. The result is an easy-to-eat, mellow curry with a deep richness of sake lees spreading in the mouth, harmonized with a subtle aroma of Japanese sake. Additionally, Katsuyama DMO also sells "Ippongi Classic Pudding" (550 yen), a collaboration with Ippongi, at its self-operated cafe "CAFE MOOI" adjacent to the roadside station. Please enjoy both.
