With the concept of "Communicating the New Charms of Kyushu," we have opened a unmanned specialty store for Kyushu's local instant ramen in Shinjuku Ward, Tokyo. We aim to be a new hub for disseminating Kyushu's food culture from Shinjuku to the world.

The store offers a selection of instant ramen from various parts of Kyushu, available for purchase 24 hours a day.

However, the true appeal of this establishment lies beyond.

Opening a secret door inside the store reveals the experiential neo-Kyushu bar "Kyushu Danshi to Hakata Bijin," featuring 100 barrels of aged shochu.

In a sophisticated space that deliberately avoids the typical ramen shop aesthetic, we exhibit and sell local instant ramen from each prefecture of Kyushu. It's a new type of unmanned store where you can choose Kyushu flavors as if you were traveling.

The price is 1000 yen (tax included) for any three ramen bowls.

It's a simple system: insert cash into the dedicated box and take home your three chosen ramen bowls.

[Experiential Bar Unveiled Behind the Secret Door]

The centerpiece of the interior is the 100 barrels of aged shochu lining the walls. Customers can freely pour their own servings and combine them with soda, tea, citrus, herbs, and more to create their own unique drink. The shochu aged in barrels changes its flavor profile daily, offering a new encounter with a different taste each visit.

Our goal was not just to create a bar for shochu lovers, but a place where even those who have never tried shochu can enjoy it.

In addition to the mellow taste developed through barrel aging, we also offer recommendations for brands and drinking methods through a shochu diagnostic app. You can easily enjoy the world of shochu without any prior knowledge.

Beyond the freedom to choose, pour, and mix, you can also enjoy a comparative tasting of fresh (unaged) shochu and aged shochu of the same brand.

Why Shochu, Now?

Shochu is one of Kyushu's representative food cultures, originating from Kagoshima and Miyazaki. However, in recent years, the market has been in a continuous decline due to factors such as a declining birthrate and aging population, young people's disinterest in alcohol, increasing health consciousness, and changes in drinking culture.

As a company founded by natives of Kyushu, we believe this situation is not a "disinterest in shochu" but rather a "lack of opportunities to encounter shochu." We want to pass on Kyushu's long-inherited shochu culture to the next generation. This desire is the origin of our store's creation.

Therefore, by aging shochu in barrels, we propose a new shochu experience with a mellow taste, free from harshness, and a subtle aroma of the barrel. It is easily accepted by the younger generation who are familiar with highballs, and because shochu has a lower alcohol content than whiskey, it can be enjoyed lightly with soda.

Our primary aim is "to let people drink freely, deliciously, and enjoyably." We believe that this experience is the first step in connecting Kyushu's shochu culture to the future.

Kyushu Cuisine Possible Only Because We Are a Butcher Shop.

Using carefully selected Japanese Black beef and ingredients from various regions of Kyushu, we offer a variety of creative dishes that pair well with shochu, such as motsunabe (offal hot pot), wagyu tataki yukke (seared beef tartare with egg yolk), seared carpaccio, and Nagasaki sara udon ver2.0 using Kyushu ingredients, and low-temperature flying fish dashi tamagoyaki (rolled omelet).

I hear that young people today go to company drinking parties less often.

I suppose that's the era we live in.

I'm not trying to push alcohol on anyone. However, the time I spent talking, laughing, and sometimes being scolded and encouraged over drinks has shaped who I am today.

Looking back, I'm glad I had alcohol in my life. I feel that way.

It may sound pushy, but we created this store with the desire to provide that "time for people to connect" along with Kyushu's proud shochu. If you have the chance, please come with a boss you dislike.

You might come to like them a little.

If you still dislike them by the time you leave, then the problem lies with your boss, not the shochu.
