Profile of Head Chef Shuji Muraoka:
Began working part-time at Tonkou Tokuyama store during his second year of high school. Initially, he was assigned to dishwashing for about half a year, then moved on to food preparation. He was told by the head chef and sous chef at the time that he had a talent for cooking and, even as a part-timer, was entrusted with tasks like meat cutting and fruit platters, earning recognition. Upon graduating high school, he joined Tonkou at the age of 18. He was assigned to the newly opened large Tonkou Shimonoseki store as a new employee. Subsequently, he gained experience at all stores, including the Ube ANA Hotel store, and was appointed store manager and head chef at 27. He then served at various Tonkou locations in Kansai and elsewhere before being appointed General Chef, and served as Kitchen Manager, Area Manager, and Deputy General Manager. In April 2018, he was appointed Representative Director and General Chef concurrently with the establishment of Tonkou Co., Ltd., a group company of Yakiniku Sakai Holdings Co., Ltd. His motto is "Ichiza Konryu," aiming for a special sense of unity created when hosts give their best and guests are filled with感動 (deep emotion). This is also Tonkou's management philosophy, which is considered necessary not only for customers but also for the internal corporate culture, wishing for employees and their families to share happiness. Note that Tonkou Co., Ltd. was absorbed and merged into Yakiniku Sakai Holdings Co., Ltd. on October 1, 2025.

In an era when authentic Chinese cuisine was rare in local areas, Tonkou expanded restaurants primarily in Yamaguchi Prefecture, focusing on Sichuan cuisine. At the time, Sichuan cuisine, with its spicy image, was unfamiliar to customers and the restaurant struggled, but it gradually gained acceptance and is now supported as a leading Chinese restaurant in Yamaguchi Prefecture. Each store is equipped with large banquet halls and private rooms, making it suitable not only for everyday use but also for special occasions and various banquets.
