The "Spring Yonezawa Beef Kaiseki Course" is prepared by the head chef of "Yonezawa Beef Ooki Ginza Store".

The course features Yonezawa beef as the main dish, but also includes Yonezawa beef from the appetizers to the warm dishes. Our recommendation is the "Yonezawa Beef Domyoji Mushi", where Yonezawa beef is wrapped in a pink dough and steamed!

Warm Dish: Yonezawa Beef Domyoji Mushi

This steamed dish uses "Domyoji flour", the same ingredient used for sakura mochi, and is a recommended dish before the main course. Minced Yonezawa beef is wrapped in domyoji flour and steamed to a cherry blossom pink color.

By steaming instead of grilling, the sweetness of the meat's fat is gently enveloped by the domyoji, and topped with an elegant happo-dashi sauce, it offers a rich meaty flavor with a light aftertaste. We recommend enjoying it with grated wasabi.

When developing the menu, there was still snow in Yamagata Prefecture.

Therefore, we have to coordinate with suppliers every year to determine the arrival time of spring ingredients, mainly wild vegetables.

Despite this, we were able to realize this culmination of a course with a commitment to delivering the blessings of Yamagata.

Our particular focus with the Domyoji Mushi was the surprisingly rich harmony between "traditional Japanese culinary techniques" and the "powerful umami of Yonezawa beef". While it's common to use white fish, we aimed to create a product unique to a beef specialty store and pursued customer satisfaction.
