Wolfgang's Steakhouse by Wolfgang Zwiener (hereinafter "Wolfgang's Steakhouse"), a steakhouse originating from New York, will open its first new store in the Tokai area, "Nagoya Store," in September 2026. At the Nagoya store, similar to our existing stores, we will offer exquisite steaks that focus on "quality, aging, and grilling" using rare American beef graded "Prime Grade" by the U.S. Department of Agriculture, along with authentic seafood dishes and a diverse selection of over 1000 wines from around the world, all to be enjoyed in a dignified and elegant space.

Exquisite Steaks Focused on "Quality, Aging, and Grilling"

"Prime Grade," certified as the highest quality by the U.S. Department of Agriculture (USDA), is aged long-term in a dedicated aging cellar. As beef ages, the meat becomes softer due to the action of its own enzymes, and at the same time, proteins break down, increasing amino acids, which are umami components. This long-term dry-aging process enhances the tenderness and flavor of the meat, which is then cut thickly and grilled in a 900°C oven. The presentation of the steak served on a piping hot plate is truly spectacular. The result is a steak with a crispy, savory surface and juices flowing from the inside.

Wolfgang's Steakhouse's Exquisite Steaks Focused on "Quality, Aging, and Grilling"

At "Wolfgang's Steakhouse," we use only rare beef graded "Prime Grade" by the U.S. Department of Agriculture as the highest quality. The meat, procured chilled and not frozen, undergoes dry-aging for 28 days in our in-store dedicated aging cellar with controlled temperature and humidity. The lean meat, enhanced in flavor and tenderness through long-term dry-aging, is cut thickly, grilled in a 900°C oven, and served directly to your table on the same plate.

In Japan, in addition to the Roppongi, Marunouchi, Osaka, and Fukuoka stores, the Takanawa store opened as the latest branch in September 2025. Furthermore, as new brands, we have developed "Signature" for a more luxurious experience in Aoyama, and "Teppan," with the concept of "Enjoying Wolfgang's Steakhouse's exquisite steaks focused on quality, aging, and grilling on a teppan griddle," in Ginza.
