"Prime Grade," certified as the highest quality by the U.S. Department of Agriculture (USDA), is aged for a long period in a dedicated aging cellar. As beef ages, the meat becomes tender through the action of its own enzymes, and at the same time, proteins break down, increasing the amount of amino acids, which are umami components. This long-term dry aging process tenderizes the meat and enhances its flavor. The meat is then cut thick and grilled in a 900°C oven. The presentation of the steak served on a piping hot plate is truly magnificent. When cooked, the surface is crispy and fragrant, and the juices drip lusciously from the inside.

At "Wolfgangs Steakhouse," we exclusively use rare beef graded "Prime Grade" by the U.S. Department of Agriculture as the highest quality. The meat, procured chilled and not frozen, undergoes dry aging for 28 days in our in-store dedicated aging cellar under controlled temperature and humidity. The lean meat, tenderized and enhanced in flavor through long-term dry aging, is cut thick and grilled at 900°C in the oven, then served directly to your table, on the plate.
In Japan, in addition to the Roppongi, Marunouchi, Osaka, and Fukuoka stores, the Takanawa store opened as our latest branch in September 2025. Furthermore, as new brands, we have opened "Signature," a more luxurious concept, in Aoyama, and "Teppan," with the concept of "enjoying Wolfgangs Steakhouse's exquisite steaks emphasizing 'quality, aging, and grilling' on a teppan grill," in Ginza.
