Previously, the medicinal hot pot was offered exclusively to overnight guests as a seasonal dinner option during winter. The flavors, inherited from Taiwan, were extremely popular, so we decided to offer it as a lunch service so that guests can enjoy it year-round, even on day trips.
The character "Mitsu" (謐) means "tranquility" or "quietness." In this fully wooden detached building renovated from a cow barn, enveloped in the scent of wood and filtering sunlight, we have created two private room spaces equipped with both dining and relaxing areas. Limited to two groups each for lunch and dinner.
Staff Experience: Feeling "Warm" and "Happy" After Eating
Prior to the opening, our staff also experienced "Mitsu."
The first thing that surprises you is how it warms you up. You put herbal ingredients into the broth and let it simmer slowly for 20 minutes while feeling the warmth of the wood stove. Taking a sip of the soup, warmth gradually spreads from the core of your body. It received high praise, especially from female staff members who were concerned about poor circulation or wanted to start "onkatsu" (warming activities).
Then comes the time after the meal. With your body feeling toasty, you can spend time gazing out the window at goats walking leisurely or cats sunbathing. It's not just "delicious"; you are enveloped in a mysterious sense of happiness, as if your mind is unwinding.
