UNCHI Corporation (Headquarters: Osaka City, Osaka Prefecture; CEO: Takahi Matsumura) will grand open 'Jinrui Mina Menrui Back Fat Garlic Soy Mazesoba Kyoto,' a new specialty mazesoba ramen shop centered on the trio of back fat, garlic, and soy sauce, in front of Kyoto City Hall on Thursday, June 11, 2026. This marks a new concept under the popular Osaka-based ramen brand 'Jinrui Mina Menrui,' known for its endless weekend queues.
Back Fat × Garlic × Soy Sauce — A New Era of Mazesoba That Awakens Your Instincts Toward Noodles and Meat
At the heart of 'Jinrui Mina Menrui Back Fat Garlic Soy Mazesoba Kyoto' lies a bold new style: mazesoba where rich pork back fat, premium domestically sourced garlic, and the deep, signature soy sauce tare from 'Jinrui Mina Menrui' come together in perfect harmony. The stars of the dish are the noodles and meat. Featuring tender, melt-in-your-mouth char siu braised in a special tare, the dish invites customers to customize their bowl using a variety of condiments available on the table. This embodies the concept of 'the era of creating your own flavor,' delivering a powerful and deeply satisfying bowl.
'One base flavor, but infinite final forms for each customer' — This philosophy is the core appeal, where different combinations of toppings and condiments create entirely unique taste experiences.

In November 2023, ingredients from 'Ramen Motoi' were launched from Kennedy Space Center aboard SpaceX's Falcon 9, led by Elon Musk, marking the world's first 'exposure of food ingredients to outer space.' To prevent bursting due to pressure changes, the ingredients were processed into powder form. They were exposed to intense cosmic rays and ultraviolet radiation for approximately 10 months in the harsh environment outside the ISS (International Space Station), orbiting about 400 km above Earth at a speed of approximately 7.9 km per second.
The ingredients returned to Earth in December 2024. Upon opening, it was confirmed that the distinctive ramen aroma had persisted, yielding valuable data that demonstrates the potential for food in the space age.

Driven by the mission 'to change the world through ramen,' UNCHI Corporation has continuously created popular ramen brands such as 'Jinrui Mina Menrui,' 'Kuso Oyaji Saigo no Hitofuri,' and 'The World's Most Idle Ramen Shop.' The company began overseas expansion in 2018, opening locations in Manhattan, New York, as well as China, South Korea, and Nepal. In 2020, it launched a franchise business, opening over 20 stores even during the pandemic.
Additionally, to support restaurants struggling with sales, the company developed 'Jinmen,' a brand that allows ramen to be easily made with just water and soy sauce. In summer 2020, 126 Jinmen stores opened simultaneously across Japan, showcasing the company's proactive initiatives.
In November 2022, CEO Takahi Matsumura personally traveled to war-torn Ukraine to cook 'Jinrui Mina Menrui Meccha Uma Kai Dashi Shoyu Ramen,' co-developed with Nissin Foods, for local people, demonstrating global charitable activities.
Message from Takahi Matsumura, Founder of Jinrui Mina Menrui
<Photo: Takahi Matsumura, CEO of UNCHI Corporation>
Hello everyone. When I was 10 years old, I dreamed of opening a ramen shop, and I was able to realize that dream at the age of 24. Now, I am working every day toward my new dream: 'to be the first to open a ramen shop on Mars.'
People often respond with, 'What an interesting dream,' treating it somewhat like a fantasy. However, my brand's ingredients were actually launched into space, endured about 10 months of exposure in outer space, and returned to Earth. I am truly delighted that we could unveil this journey at the Osaka-Kansai Expo. This moment truly felt like one step closer to my dream of Mars.
I hope this inspires excitement and encourages everyone to think about their own dreams. Please continue to follow UNCHI Corporation's mission: 'to change the world through ramen.'
