Since its founding in 1893 as a local brewery in Yamato, Umenoyado Shuzo has walked a history of transformation looking toward the future. In the 1970s, it shifted from selling sake in bulk to larger brands to brewing authentic Ginjo sake to establish its own brand. It has embraced diverse perspectives, such as being the first in Japan to hire a British person as a brewery worker. Furthermore, in 2017, the company retired the long-standing Toji (master brewer) system. Currently, it has transitioned to a "team-based" manufacturing system, pursuing organizational technology succession and data-driven quality stability beyond individual experience.

To draw out new charms of sake, Umenoyado Shuzo pioneered the development and manufacture of "sake-based plum wine." Although it was an unprecedented attempt at the time, we established a unique category through trial and error.
