The year-long renovation project, themed "Balance of Tradition and Evolution," recreated a space where the emotions of yesteryear breathe in the modern era. Areas that were previously private have been reborn with a contemporary look and will be open as a space to enjoy the morning. While preserving the traditional mizutaki soup passed down through generations, we have developed special menus for breakfast and lunch. By reviewing the evening course content, we have pursued hospitality that aligns with the present age, allowing more people to enjoy our offerings. About the Building
The building, which dates back to the late Edo period before the restaurant's founding, is a valuable historical structure that miraculously survived the great fires of 1788 and 1864, which destroyed most of Kyoto city, and remains to this day. While the facade along the Takase River retains its distinctive appearance with various lattices, its form has changed over time along the Kamo River, with a mezzanine added in the late Edo period and new tatami rooms on the second floor in the early Showa period. In this renovation, with the aim of "restoring the atmosphere of yesteryear," we have made efforts to make the space more beautiful, such as hiding the air conditioning in the ceiling and modernizing the lighting to evoke the Edo period. The previously private spaces have been renovated into "Byaku," a seating area exclusively for breakfast and lunch, and "Toya," an invitation-only bar. The restaurant also features private rooms accessible by wheelchair, preserving its old-world charm while significantly evolving in terms of functionality.

About Mizutaki
The characteristic of Toriyasa's mizutaki, which originated from the "kashiwaya" (chicken shop) started by its founder Yasuke, is its rich, white soup made only from chicken bones and well water that springs up on the premises. No seasonings are added; it is made with time and effort. Breakfast and lunch, which will begin with the renovation, are by reservation only. You can enjoy courses of "chicken soba" and "chicken porridge" made with the traditional soup in a modern Japanese space filled with soft light. The evening menu has been restructured to include popular items not previously in the course, as well as special mizutaki courses featuring seasonal ingredients, all to be enjoyed with an extensive drink menu. This long-established restaurant, loved by many historical figures and cultural luminaries including Ryoma Sakamoto, is making a fresh start for the next era by preserving the old and good while adding new essences.

Building the "New Toriyasa" with a Team of Creators
To create a new "Toriyasa" where tradition and innovation coexist, we promoted the project with a team of top creators.
Interior Design: Yuki Takizawa, BAZIK Inc.
President and CEO of BAZIK Inc., who carefully examines the entire space, from materials, furniture, and lighting to artwork, and proposes new design possibilities. He has worked on many Tysons & Company stores. For Toriyasa, he plans to renovate existing parts and design new spaces using previously unused areas.
Design Supervision: Koji Shimizu, ki-ya
Representative of ki-ya Co., Ltd., which works on architecture based in Kyoto. After training at a sukiya-zukuri (tea-ceremony house style) carpentry company, he became independent and is involved in a wide range of activities using wood, including renovating old buildings, new constructions, and acquiring patents for wood dryers. He is responsible for overall supervision, utilizing his extensive knowledge of wooden architecture.

Founder and designer of the fashion brand RAINMAKER, based in Kyoto. Winner of the TOKYO FASHION AWARD 2019. In addition to his own brand, he also designs various uniforms for restaurants and department stores.
