This course meal incorporates "ACACIA" honey, synonymous with "HACCI," and refreshing "LAVENDER" honey, perfect for summer, into a welcome drink and four dishes, totaling five items. Gramercy Suite, which focuses on "French Japonais" – an artistic and beautiful fusion of traditional French techniques with Japanese aesthetics and delicacy – will elevate the natural sweetness, acidity, and aroma of honey into hidden flavors and sauces using exceptional techniques. The luxurious summer course begins with a welcome drink using the refreshing "HACCI <LAVENDER> Honey" to entertain guests. The appetizer, marking the start of the meal, is a masterpiece featuring lightly seared striped jack, its umami concentrated in a tartar, topped with the "jewel of the sea," Osetra caviar. It is elegantly finished with a mousse combining "HACCI <LAVENDER> Honey" with the tartness of plum and a shiso jelly for a refreshing touch.
The two warm appetizers offer a harmonious blend of Japanese and French flavors: a rich and creamy pan-seared foie gras and melt-in-your-mouth Mikawa Tengu eggplant, paired with a sauce of "HACCI <ACACIA> Honey" and fragrant burnt miso. The other dish is a sea urchin risotto, rich with the oceanic aroma of Aosa seaweed from Mie Prefecture.
For the fish course, we present steamed sea bass from Mie Prefecture, served with a zucchini roulade, a white wine sauce, and the aroma of herbs, embodying a light summer feel. The meat course features roasted summer venison from Hokkaido, accompanied by Aichi Prefecture corn beignets (Western-style tempura), amaranth leaves, and nuts for accent. A special sauce with the mellow sweetness of "HACCI <ACACIA> Honey" and a hint of black pepper enhances the umami.
The concluding dessert is a sophisticated baked cheesecake for adults, where the rich saltiness of Gorgonzola cheese melts into the elegant sweetness of "HACCI <ACACIA> Honey," with a black shichimi pepper accent to sharpen the flavors.
