The lunch buffet at BAR & GRILL Splish features a "Hokkaido Exploration Menu" project that tours the charms of various parts of Hokkaido through food. The head chef personally visits different areas in Hokkaido, experiencing the producers and local food culture, and has introduced dishes featuring unique local ingredients and stories. This time, the spotlight is on Niseko Town, where guests can enjoy a buffet-style meal featuring dishes using ingredients from the Shiribeshi region, including Niseko, as well as a menu incorporating ideas from students at Hokkaido Niseko High School.

Promoting Niseko's Sustainable Agriculture with the Next Generation

Located in Niseko, an "SDGs Future City" and "Environmental Model City," Hokkaido Niseko High School (hereafter Niseko High School) is a leading school in agricultural education, with its own "Agri-Food Course" and organic JAS-certified farmland. In this project, we will offer an original menu developed using local ingredients, resonating the fresh sensibility of Niseko High School students with professional skills. The collaboration is not limited to menu development. For one day only during the period, students from the school will appear at the restaurant to serve dishes and entertain customers with handmade message cards. Additionally, the head chef plans to visit Niseko High School to provide multifaceted support to the students who will carry the future of food, through special lectures on themes of "food education" and "career formation" from a professional perspective. We aim to shift from "consumption-only tourism" to "tourism that nurtures the region," and achieve "delicious regional contribution" through local production for local consumption.

Special Menu Devised by Niseko High School Students! Maximizing the Flavor of the Ingredients

During the period, we will offer a menu arranged in the Splish style, focusing on three dishes devised by the students, and featuring the blessings of the Shiribeshi region.

・Snow-covered Carrot Potage: Carrots wintered under the snow have less of their characteristic raw smell and are surprisingly rich and sweet. This potage allows you to enjoy the original taste of the ingredients directly.

・German Potatoes with Niseko Potatoes: Enjoy the fluffy texture of potatoes grown at the foot of Mt. Yotei, with an added toasty flavor from being well-grilled. The deep sweetness and rich umami of the potatoes will fill your mouth.

・Salsa Dog in Banh Mi with Sauerkraut-style Snow-covered Cabbage: A crispy and fragrant banh mi topped with plenty of salsa sauce and crisp snow-covered cabbage...
