As part of our regional collaboration event "Higashikawa Town, Hokkaido Takes Over the Hotel! 2026," which began on June 16, 2026, this premium dinner with "Mille-Sakura Brewery," known for relocating its entire brewery to Higashikawa Town in 2020, drawn by the town's pristine natural water, has been realized.
This event was born from the synergy between the hotel's desire to "showcase the culinary appeal of Hokkaido" and the rich resources of Higashikawa Town, along with Mille-Sakura Brewery's dedication. We aim to convey a new charm of Hokkaido's food culture through this unique combination of top-class sake brewed with the abundant water of Mt. Daisetsu and a special French course meticulously crafted by our hotel's chef exclusively for this occasion. On the day, we will welcome Mr. Koji Yamada, Toji (master brewer) of Mille-Sakura Brewery, as our guest, who will provide explanations of each sake brand and share his passion for sake brewing. [Pioneering the Future Through Public-Private Management: The Story of the Miraculous Sake "Mille-Sakura"]
Founded in 1877 (Meiji 10) in Nakatsugawa City, Gifu Prefecture. Higashikawa Town, possessing both "delicious water and rice" essential for brewing fine sake but lacking a brewery, conducted a rare "public-private management" public recruitment in 2019. Mille-Sakura Brewery responded, relocating in 2020. This move was prompted by a challenging period where the brewery's aging facilities in Gifu and global warming made traditional sake brewing increasingly difficult year by year. "Mille-Sakura" is a miraculous sake born from the aspirations of a long-established brewery that found potential for sake making in the northern land, and the fervent desire of the townspeople to "create sake that embodies Higashikawa Town."

Additionally, during the meal, Mr. Koji Yamada, the sixth-generation president and Toji of Mille-Sakura Brewery, will take the stage. He will provide easy-to-understand explanations of the four sake brands to be served, including behind-the-scenes stories of their brewing process and the characteristics of the sake rice used. He will also share his passion for sake brewing and his new endeavors in Higashikawa Town. We propose a special experience that engages all five senses, allowing you to not only savor the flavors but also be intoxicated by the exquisite sake along with the brewers' heartfelt stories.
