About Lindores Abbey Distillery

It is said that distillation took place at Lindores Abbey at this time. Drew Mackenzie Smith, the landowner, confirmed the remains of a still through archaeological investigation and subsequently established Lindores Abbey Distillery in 2017. Dr. Jim Swan, who passed away, was deeply involved in its establishment, incorporating techniques honed through consulting for distilleries worldwide, such as a distillation system combining one wash still and two spirit stills, and maturation in STR casks. Fermentation is exceptionally long, lasting 96-114 hours, extracting tropical flavors from the wash. The use of two spirit stills increases copper contact, removing off-flavors, while simultaneously, angling the lyne arm downwards achieves a robust spirit character.
