Vegan Ramen UZU Kyoto (Kyoto, Gosho Minami), a specialized vegan restaurant, has been awarded the "Michelin Green Star" for the second consecutive year in the "Michelin Guide Kyoto Osaka 2026."
The "Michelin Green Star" is a symbol awarded to restaurants that are actively committed to sustainable gastronomy and serve as role models in environmental protection and social contribution.
In 2025, Vegan Ramen UZU Kyoto became the first restaurant in the world in the ramen category to receive this award.
Additionally, it has received the "Bib Gourmand," an award for restaurants offering high-quality food at a reasonable price, for the fifth consecutive year.
[Michelin Guide Comment]
The philosophy of Vegan Ramen UZU, "Earth-friendly food," merges with teamLab's philosophy, "Connection between nature and people, and between people themselves," in an artistic space. The digital art of calligraphy reflected inversely on the walls and black tables harmonizes nature with food, connecting to all things in the universe. Eating at the same table feels like the coexistence and mutual prosperity of humanity.
[Comment from Ryo Kataoka, Representative of Vegan Ramen UZU Kyoto]
I am very happy to be recognized for five consecutive years. The choice not to use animal-derived ingredients is not a restriction. It is about listening to what plants and grains have to say when they are given the leading role—in Kyoto, where Buddhist reflection and the tradition of Shojin cuisine live on, this is a return to the essence. We will continue to seek the true, rather than the new.
[About Vegan Ramen UZU Kyoto]
Vegan Ramen UZU Kyoto opened in 2020 in the Gosho Minami area of Kyoto. The art piece "Reversible Rotation - Black in White" by the art collective teamLab is displayed on the wall, with polished black tables arranged to surround it. Guests can enjoy vegan cuisine while being enveloped by the artwork reflected on the tables as well as the walls. The space was created in the hope that it would be a place to face eating and even living (life).
Vegan Ramen UZU Kyoto offers the "UZU Signature Course," composed entirely of vegan dishes from the welcome drink to dessert. The ramen soup is cold-brewed for 12 hours using Rausu kelp, domestic shiitake mushrooms, and vegetables. The noodles are made from Hokkaido wheat flour and organic whole wheat flour from Aya Town, Miyazaki Prefecture.
Furthermore, the restaurant offers menus aimed at zero food waste, such as "Nut and Miso Cheese with Yatsuhashi," which layers 10 different ingredients, and "Hand-rolled Sushi" featuring shiitake mushroom tsukudani made from soup leftovers, accented with red vinegar rice, fresh Japanese pepper, and shiso.
