On Monday, April 6, we will open 'Yakitori to Soba Eiji', a Japanese-style izakaya featuring yakitori and soba, on the 1st floor of the 'Delis Yokohama Building', a new landmark at the west exit of Yokohama Station designed by world-renowned architect Kengo Kuma. 'Delis Yokohama Building' is a place where many people come and go as a restaurant building that creates new bustle in the rapidly redeveloping Yokohama West Exit area.

The newly opened 'Yakitori to Soba Eiji' is a new store inheriting the lineage of 'Yakitori to Soba Tomiji', a soba and yakitori izakaya that has gained support from a wide range of generations in Kawasaki. While keeping its taste and concept, we focused on creating a higher-quality and more relaxing space suitable for the city of Yokohama.

The soba is a Nihachi (80% buckwheat, 20% wheat) style made by carefully selecting particularly flavorful buckwheat flour from domestic sources. We pursued a balance of the rich aroma of buckwheat flour, a supple and pleasant chewiness, and a smooth finish. The soba soup, like our sister store 'Yakitori to Soba Tomiji', combines a 'kaeshi' (base sauce) made by carefully aging premium mirin, domestic crystal sugar, and several types of soy sauce, with a broth blended from mackerel flakes, bonito flakes, and anchovies. The deep flavor further enhances the deliciousness of the soba. We also paid attention to the balance of flavors for both dipping soba and warm soba, creating a dish that can be enjoyed to the end without getting tired of it. In addition, for our signature 'Kakomi Soba', we offer unique dipping sauces such as 'Porcini Sauce' and 'Sesame Tantan Sauce' alongside the standard soba soup. We propose a new way to enjoy fragrant soba with various flavors.

For the yakitori, we carefully grill each part over charcoal while assessing its umami, making it fragrant on the outside and plump on the inside. The cooking process, which brings out the power of the ingredients, richly colors the time before eating soba. Furthermore, while building upon traditional Japanese techniques like tempura and Japanese ingredients like duck, we are also attempting to modernly reconstruct Japanese cuisine. A dish where duck meat is treated like Peking duck and wrapped in rice paper is a new expression fusing Japanese and Chinese elements. We also offer evolved dishes that add a playful touch while utilizing the ingredients' inherent flavors, such as rare mentaiko tempura and asparagus tempura finished Bismarck-style with egg and cheese.

The alcohol lineup centers on sake and wine carefully selected from all over the country. In addition to drinks paired with soba, such as soba tea highballs and soba shochu, we also carry standard sours and shochu to meet a wide range of needs.
