SU-BEE Co., Ltd. Colorful Wellness Lunch for Summer

In recent years, prolonged heatwaves have led to an increasing number of people experiencing summer-specific discomforts such as loss of appetite, coldness from air conditioning, and disrupted daily rhythms. This new lunch course is designed to care for the body during summer while preserving the joy and satisfaction of eating. The highlight is a vibrant array of small dishes made with seasonal vegetables and aromatic herbs. The menu allows guests to enjoy a variety of flavors in small portions and includes vegan dumplings with a satisfying richness that belies their vegetable-only ingredients, as well as pressed sushi made with seasonal vegetables. This course proposes a new form of wellness dining: not 'healthy because I have to endure it,' but 'healthy because it's delicious and I want to choose it.'

By using no animal-based ingredients, the course is suitable not only for vegan and vegetarian guests but also for health-conscious individuals and those whose appetites wane in the summer heat. The colorful presentation of the small dishes creates a festive and photogenic plate, perfect for sharing on social media. While harnessing the natural power of seasonal vegetables, the lunch aims to deliver a refreshing experience that lightens both mind and body, while also offering locals a renewed appreciation of the aesthetic sensibilities and food culture passed down in the Kaga region.

What is Gofun?

Gofun refers to the five traditional colors symbolizing Kaga Yuzen: indigo, crimson, ocher, grass green, and ancient purple. These colors represent the refined aesthetic cultivated in Kanazawa, the castle town of the Kaga domain, and continue to influence crafts and culture today.

◾️ barrier (Baria)

'barrier (Baria)' is a creative Japanese cuisine restaurant located near Kanazawa's Higashi Chaya District, just steps from the arched Asanogawa Bridge, a tourist attraction. Housed in a renovated traditional Japanese townhouse, it offers guests a unique dining experience where innovative dashi-based cuisine merges with culinary magic and spatial art.

◾️ Space The concept of 'barrier = boundary' creates a sacred space that draws a line between the bustling heart of Kanazawa city and the surrounding noise. This boundary allows guests to experience contrasts between old and new, yin and yang. The delicately renovated machiya space seamlessly blends art and cuisine, offering an experience akin to traveling through time and space. In complete darkness, illuminated only by pin spots, the contrasts of 'yin and yang,' 'day and night,' and 'ancient and modern' express the 'barrier' concept. Guests can enjoy a meditative, zen-like experience beyond the everyday.

◾️ Menu At barrier, a 'sanbou' (three-section tray) is used as a dining tray, and the first dashi, extracted via siphon, is poured over three dishes served in 'okamochi' (small containers). This enhances the depth and richness of the guests' dining experience. barrier aims to preserve the essence of traditional Japanese cuisine while using modern approaches to reveal new charm. Please savor dashi-complementary dishes while sharpening your five senses in the pitch-black space.
