St. Cousair Co., Ltd. (Headquarters: Iizuna Town, Nagano Prefecture / Representative Director and President: Ryota Kuze) will launch a new product as the 4th installment of its 'Shinshu Fruit Jam' series, luxuriously using 'Benihoppe' strawberries from Nagano Prefecture, which are now in season.

This series is a special line produced with handmade methods in a product development lab, not a factory, pursuing the authentic taste of the ingredients. *All three types released so far – 'Plum,' 'Peach,' and 'Maypole & Kosaka' – have sold out.

Bringing the Farm Landscape Directly to Your Table

St. Cousair's origin lies in the apple jam served to guests at a pension in Shinshu Madarao Highlands. 'Shinshu Fruit Jam' began by returning to that origin, aiming to bring smiles to everyone with the authentic taste of the ingredients.

For the development of this product, in early March 2026, the development team visited a strawberry farmer in Nagano Prefecture. Standing before the bright red strawberries ripening in the greenhouse, they learned from the grower about the delicate taste and condition of seasonal strawberries, and the passion of the producers put into each and every berry.

An overflowing table of smiles, surrounded by customers at the founder's pension. Cherishing that scene, we deliver the 'taste of origin' to everyone with heartfelt care, together with the producers' passion.

What is Shinshu Fruit Jam?

Luxury of 80% Fruit Content, Exceeding JAS Standard of 45%

The feature of this product is its luxurious 80% fruit content. Generally, the standard set by JAS is 45% or more, but this product uses about 1.7 times that volume of strawberries.

The ingredients are only 'Nagano Prefecture-grown strawberries,' 'sugar,' and 'lemon juice.' Without using any thickeners (pectin), each fruit is cut into large pieces and simmered, resulting in a jam that spreads a sweet, happy aroma every time you scoop it, allowing you to 'savor the seasonal bounty.'

Handmade Jam Finished One by One

In mid-April, this product was manufactured at the product development lab annexed to the office in Shinano Town, Nagano Prefecture. A total of 11 staff members, including the development manager, gathered for this occasion.

Before manufacturing began, the development manager said, 'The feelings you put into making it come through in the taste. Let's process it with a lovely heart, just like these strawberries,' and it started in a harmonious atmosphere. All 110kg of 'Benihoppe' strawberries, directly from the farm, were washed by hand, and the stems were carefully removed one by one. The manufacturing process proceeded with meticulous handiwork under thorough quality control, including selecting unripe parts that would impair the taste.

Commitment to Nagano Prefecture-grown 'Benihoppe' and Exquisite Simmering Time

The strawberries used are Nagano Prefecture-grown 'Benihoppe,' which have a good balance of sweetness and acidity and are suitable for processing. Ripe strawberries from April, which have a firm taste, were used.

The manufacturing site's refreshing aroma when cutting strawberries transformed into a rich, sweet aroma as simmering progressed. To preserve the chunky texture of the fruit and bring out a vivid crimson color, the simmering process focused on identifying the optimal state and adjusting the time.

Comment from Developer Moé Oyamada

――What are the characteristics of the strawberries used?
We use a variety of strawberry called 'Benihoppe.' Benihoppe has a deep red color in both its skin and flesh, and when made into jam, it also turns into a vivid and deep red color. It has a good balance of sweetness and acidity, and its firm flesh allows you to enjoy the chunky texture of the fruit.

――What were the key points you focused on in creating the taste?
We focused on simple ingredients to bring out the deliciousness of the raw materials. The jam has a satisfying taste where the aroma of strawberries gently spreads, and both sweetness and acidity are firmly felt.
