Sankt Gallen Co., Ltd. (Atsugi City, Kanagawa Prefecture / Representative Director Nobuhisa Iwamoto) will launch "Parrot Scented Beer" on Wednesday, April 1, 2026. Orders will be accepted for 24 hours only on the same day via the directly managed online shop, and it will also be available on tap throughout April at the directly managed taproom near the north exit of Hon-Atsugi Station.

This beer recreates the sweet and savory "parrot scent," which is often compared to "kinako" (roasted soybean flour), "toasted bread," and "senbei" (rice crackers).

The scent of parrots is produced when they spread oil secreted from the preen gland at the base of their tail over their feathers during preening. Combined with the influence of grains like foxtail millet, barnyard millet, and Japanese millet that parrots eat daily, many people perceive this scent as sweet and savory.

This scent is affectionately known as "parrot scent" among owners.

Parrot Food Used at 32%. Recreating the "Parrot Scent" with Grains x Kinako

To recreate this "parrot scent," this beer uses grains known as parrot staples such as foxtail millet, barnyard millet, Japanese millet, and kibi (sorghum), along with oats and kinako.

The proportion of these auxiliary ingredients used amounts to 32% of the total.

The Making of Parrot Scented Beer

Since grains are difficult to break down their starch as they are, making them hard to use as beer ingredients, they are first heated with water in a large pot to make them soft like a paste.

The process of continuously stirring the grains, which become increasingly sticky as they heat up, without burning them, was more physically demanding than imagined.

The softened grains are then added to a "mash" made of malt and hot water to create the wort, the base of the beer. Kinako is added in the latter half of the wort boiling process to utilize its savory flavor, and then it is fermented to completion.

  1. Boil and soften Japanese millet, foxtail millet, and barnyard millet.
  2. The larger grain, kibi (sorghum), is heated for a long time in a separate pot.
  3. Combine all grains and simmer while stirring until they become paste-like.
  4. Add oats to the "mash" made from crushed malt and hot water.
  5. Add the paste-like grains.
  6. Add kinako and ferment.

This brew is characterized by the gentle sweetness of the abundant grains and the sweet, savory aroma and aftertaste of kinako.
