[Ajino Mingei] 'Beef Tongue' Menu Available from July 2nd!

Ajino Mingei Food Service Co., Ltd. (Head Office: 2-118 Yatsurugi, Moriyama-ku, Nagoya City, Aichi Prefecture; President: Akira Sakakibara), a group company of Sagami Holdings Inc., will begin selling 'Beef Tongue' menu items at 'Ajino Mingei,' known for its handmade udon and Japanese cuisine, starting July 2, 2026 (Thu).

In addition to the popular 'Beef Tongue,' which has become a summer staple, we have prepared a selection of nutritious, carefully chosen menus, including 'Kurohanagyu Steak' where you can enjoy domestic A5 rank Kurohanagyu (black flower beef).

Furthermore, this year we are introducing 'Hand-Pulled Somen Noodles' for summer, allowing you to savor the 'coolness' of summer with its refined flavor and smooth texture.

Ajino Mingei's summer stamina menu, perfect for preventing summer fatigue and recovering from daily tiredness, can only be enjoyed during this season. [About Ajino Mingei]

Founded in Okayama Prefecture in 1976, Ajino Mingei is celebrating its 50th anniversary this year. It is a restaurant primarily focused on handmade udon and Japanese cuisine, with 50 stores nationwide, mainly in the Kanto region and extending west to Okayama. In a calm 'Japanese' atmosphere, we offer our signature handmade udon, soba, various Japanese dishes, and seasonal limited-time menus. It can be widely used for meals with family and friends, as well as for solo dining.

[Features of Handmade Udon]

Because it is made by continuously stretching without using a knife, the surface is smooth and the throat-feel is second to none. Handmade udon is characterized by its thick noodles and strong, firm elasticity, which has led to the saying that Sanuki (handmade) is 'male udon' and Bitchu (hand-pulled) is 'female udon' in comparison.

It takes about 30 hours or more from dough preparation to noodle completion to make handmade noodles.

[Commitment to Dashi and Broth]

Using 'Kombu from Rishiri, Hokkaido,' 'bonito flakes,' 'urume sardine flakes,' and 'mackerel flakes,' we make additive-free 'dashi' (broth) at our stores every day.

Based on this 'shirodashi' (white dashi), we add our special 'kaeshi' (seasoning base) to create 'golden dashi' and 'tsuketsuyu' (dipping broth) that pair well with smooth handmade udon.

We prepare the 'shirodashi' that forms the base of our 'flavor' at the store every day.
