This fair will unfold as an experience-based project where visitors can "understand while tasting" the value and depth of agriculture and horticulture, by combining domestic wheat nurtured across various regions of Japan with diverse herbs from around the world. By intersecting the quality and individuality of domestic agricultural products with the diversity of global food cultures and plant cultures, it will create a world reminiscent of an "international garden tour through food."
Eight stores exhibiting in the museum will participate, offering limited-edition creative ramen with the theme of "Domestic Wheat" and "World Herbs" in a weekly relay format. Each store will utilize its unique techniques and sensibilities to provide a different bowl for each period.
Ramen is a dish that creates rich changes in aroma and flavor through plant-derived ingredients such as green onions, garlic, and sansho pepper. This project focuses on these characteristics and proposes new possibilities for ramen by incorporating herbs from around the world.
By expressing the aroma, flavor, and color that herbs bring in a single bowl and combining them with noodles made from domestic wheat, we aim to realize a fusion of Japanese wheat culture and global plant culture. This project will create an opportunity for visitors to experience the depth and charm of plant blessings such as herbs and domestic wheat, using ramen as an entry point.
First Round of the Domestic Wheat and World Herb Ramen Fair
Komurasaki "Basil Pork Bone Salsiccia Ramen"
The first installment of this fair, themed on domestic wheat and herbs, is "Basil Pork Bone Salsiccia Ramen" by Komurasaki, a long-established restaurant in Kumamoto. Homemade salsiccia kneaded with oregano, basil, rosemary, and sage takes the leading role, paired with extra-fine noodles made from Minamino Kaori wheat.
It's a refreshing tonkotsu x chicken broth soup fragrant with basil sauce, a bowl where the flavor of herbs and the sweetness of wheat harmonize.
