The first installment is an afternoon tea representing a colorful flower garden where flowers bloom as if rejoicing in the arrival of spring. This time, we have prepared an afternoon tea designed around beautifully blooming red and pink roses. Pink butterflies made of candy and bees made of choux pastry come to visit the plates lined with savories and sweets specially crafted by the pastry chef.
On the sweets plate, rose-colored sweets such as a rose financier, sweet and sour lychee and raspberry mousse, rhubarb and fromage blanc mousse, and strawberry macaron are gorgeously arranged, surrounding a berry and rose jelly panna cotta. The savory plate, featuring seasonal ingredients, offers a chilled green pea potage soup and a beet and salmon garden style resembling a rose garden. In addition, guests can enjoy brandade, a regional dish of southern France, Greek tzatziki made with carefully layered sour cream, cucumber, and topped with caviar, as well as chamomile lemon and plain scones enjoyed with honey and mascarpone cream.
