Background and Challenges for Introduction

Until now, the Niigata University Co-op Asahimachi Campus Ikehara store has primarily sold bread from major manufacturers that can be easily provided. However, in response to the diversifying needs of students, faculty, and staff, and the growing social demand to reduce food waste, they sought a new partner with the desire to "provide authentic quality."
