'Shun (Toki) Aji' is a brand of horse mackerel caught in the Goto and Tsushima sea areas of Nagasaki Prefecture from April to August. Caught by the fleet of the Japan Distant Water Trawl Fishery Cooperative Association, only those that meet the standard of 100g or more per fish are distributed as 'Shun Aji'. It is a highly rare ingredient, mainly landed at Matsuura Fish Market in Nagasaki Prefecture. The flesh is firm yet moist, characterized by its rich fat and sweetness.
