The hotel "One Suite THE GRAND (Nakijin Village, Kouri)," operated by One Suite LLC (Headquarters: Nakijin Village, Okinawa Prefecture / Representative Partner: Shiro Kaizuka) on Kouri Island in the northern part of the main island of Okinawa, held the "One Suite Gastronomy Journey 26th Edition" on March 29 (Sun) and 30 (Mon), 2026. The two-day event took place at the on-site restaurant "La BOMBANCE Kouri Island" and featured a joint collaboration dinner event by three famous restaurants: "Sushi Saito" from Roppongi, "Sushi Arai" from Ginza, and "Sushi Ryujiro" from Minami-Aoyama. This project, bringing together the master chefs of three of Japan's leading sushi restaurants, was an unprecedented first attempt, resulting in a one-of-a-kind gastronomic experience where guests could taste three different styles of Edomae sushi at once. ## Held in a Special Layout Due to High Demand Normally, the collaboration gastronomy journey is held at the chef's counter (private room) limited to 8 seats. However, since this project was an unprecedented collaboration, we received an overwhelmingly larger response than expected during the advance notice to our newsletter members and regular customers of each restaurant. Therefore, to allow more guests to enjoy the event, we set up the dining area in a special layout. ## A Two-Night-Only Sushi Experience Enjoying the Handiwork of Three Sushi Masters Thanks to the connection of Mr. Takashi Saito, the owner of "Sushi Saito", who serves as an advisor for Dom Pérignon, the toast kicked off elegantly with Dom Pérignon. The venue was enveloped in a harmonious and enthusiastic atmosphere from start to finish. On the day of the event, we served a course starting with appetizers and continuing to sushi, using carefully selected ingredients such as fresh fish sourced from the Toyosu Market in Tokyo, tuna from "Yamayuki," and Kuruma prawns from Okinawa Prefecture. For the sushi serving, the master chefs stood in front of the guests, showcased and served their sushi at their respective stations, and then switched positions while continuing to make and serve sushi. The concept allowed guests to taste the sushi of all three chefs in a single meal, enjoying the subtle differences in the temperature of the vinegared rice and the pressure applied when shaping the sushi. ## Collaboration Dinner Menu [Appetizers] - Kuzu Somen (Arrowroot noodles) - Octopus - Monkfish liver - Drunken crab - Grilled largehead hairtail - Deep-fried Akajin (Coral trout) with broth - Soki Soba [Sushi (Nigiri)] - Sea bream - Bigfin reef squid - Lean tuna (Akami) - Back fatty tuna (Se-toro) - Belly fatty tuna (Hara-toro) - Premium fatty tuna (O-toro) - Gizzard shad (Kohada) - Kuruma prawn (from Okinawa Prefecture) - Sea urchin - Conger eel roll ## Three Ultra-Difficult-to-Book Sushi Restaurants Mr. Takashi Saito, Owner of Sushi Saito [Sushi Saito] <2nd Collaboration> A renowned sushi restaurant reigning at the top of the nation, having earned three Michelin stars for 10 consecutive years.
