| "Primitive Gastronomy" Expressing the Aso Region in Every Dish
Food Image
Head Chef Yamato Imanishi Restaurant Image
The restaurant offers "primitive gastronomy" created by Head Chef Yamato Imanishi, in dialogue with the Aso region.
Water springs from Aso, becomes a river, and eventually flows into the sea. We offer a culinary experience that carefully reflects the climate nurtured by the land of Aso in every dish.
We incorporate ingredients that can only be found in this season, on this day, and in this region, such as vegetables grown in volcanic soil, mountain blessings from the river basin, and plants and wild vegetables collected from the "edible garden" within the premises and through foraging in the surrounding areas. Fire cooking using firewood and embers quietly brings out the potential of each ingredient.
Head Chef Yamato Imanishi
Born in 1988 in Kochi Prefecture. After graduating at the top of his class from Ecole Tsuji Osaka, he moved to France at the age of 20 to study under Michel Bras, the "magician of herbs" in Laguiole. He later honed his skills at world-renowned restaurants such as Paris's "Septime" and "Le Chateaubriand," which defined a new era, serving as head chef in each department. Notably, in 2011, while at "Le Chateaubriand," the restaurant ranked 9th in "The World's 50 Best Restaurants." After gaining experience at a total of 5 establishments, including three Michelin-starred restaurants, he served as chef at several restaurants upon his return to Japan. From April 2025, he served as Head Chef of "LA VIGNE DINING FÛDO," the restaurant attached to Hotel La Vigne Hakuba by Onko Chishin, before taking on the role of Head Chef at Aso Retreat HONO in 2026.

| Why Foraging Now?
[Onko Chishin x Japan Flora Institute Special Dialogue] Between the Wild and Civilization Prior to the opening, a dialogue was held with Head Chef Yamato Imanishi of Aso Retreat HONO and Tomoka Furuya of the Japan Flora Institute to explore the role of this place and the essence of foraging that Aso Retreat HONO aims for. From a journey of consumption to a journey of reconnecting with the land. We present the "circulation" and "coexistence" that HONO aims for.
