Nozawa Onsen Distillery Co., Ltd. (Location: Nozawaonsen-mura, Shimotakai-gun, Nagano Prefecture; Representative Director: Philip Richards), a winner of numerous awards at global spirits competitions, will release "After the Peel" on March 30, 2026. This lemon marmalade, which features a hint of bitterness within its sweetness, is a new product that utilizes byproducts from the distillation process.
This product is a jam that makes full use of the unused portions of lemons generated during the craft gin production process, drawing out the full appeal of the ingredients.
In the production of craft gin, lemon peel is used as an important botanical for flavoring. However, there was a challenge in that the fruit portion remaining after peeling (*1) could not be fully utilized. The distillery has set a goal to "reuse all waste generated during the manufacturing process." "After the Peel" was born from the search for ways to utilize these materials without discarding them.
This product consists only of lemon juice, fruit, pith, and sugar remaining after the peeling process. It uses a delicate manufacturing method that does not add any water, relying solely on the natural pectin of the lemons to set the jam. By carefully determining the timing of the heating process, we have achieved a soft yet perfectly textured consistency. Furthermore, through repeated trial and error in collaboration with our processing partners, we have successfully commercialized this jam to maximize the appeal of the ingredients.
Designed with reduced sweetness, it offers a deep, complex flavor where "sweetness, acidity, and bitterness" are balanced in harmony.
*1: Peeling refers to the process of removing the skin of the fruit. Since only the lemon peel is used as a botanical for gin, we perform a process of carefully peeling the skin from the fruit.

We use Meyer lemons from Kumamoto Prefecture, which are also used as botanicals for our "IWAI GIN" and "SHISO GIN."
This product uses plenty of the juice and fruit remaining after the peeling process in our gin production.
We have finished it with a deep flavor where the bitterness derived from the lemon overlaps with a gentle sweetness.
By adding a small amount to a gin and soda, the sweetness and bitterness act as an accent, allowing you to enjoy a change in flavor.
Furthermore, it is recommended not only as a snack with bread, yogurt, or cream cheese, but also as a drink when mixed with milk or soda.

Reuse of Malt Residue | Sold as Whiskey Crackers Crackers made from reused malt residue are produced at our affiliated bakery. They are served at the distillery, related shops, and restaurants.
Reuse of Lemons | Juiced in-house and used as lemon juice Green lemon peels used in "NOZAWA GIN" and "CLASSIC DRY GIN" are juiced after peeling and preserved. They are used in drinks served at the distillery's tasting bar and affiliated stores.
Reuse of Waste Heat | Used for snow melting and floor heating Since our founding, we have recovered waste heat generated from our distillation machines through heat exchangers and utilized it for floor heating and snow melting within the facility.
About Nozawa Onsen Distillery Nozawa Onsen Distillery is located in the center of the village. At the "San Francisco World Spirits Competition 2023 (SFWSC 2023)," one of the world's largest and most prestigious international spirits competitions held in April 2023, all four of our craft gins received gold medals out of approximately 6,000 entries. In addition to craft gin, Nozawa Onsen Distillery is expanding its production of single malt whiskey. We have single malt currently aging, which is scheduled for release in 2026.
