New Product: Lemon Marmalade "After the Peel"

Nozawa Onsen Distillery Co., Ltd. (Location: Nozawaonsen Village, Shimotakai District, Nagano Prefecture, Representative Director: Richard Philip), a recipient of numerous awards at global liquor competitions, will launch a new product, the lemon marmalade "After the Peel," which offers a hint of bitterness within its sweetness, on March 30, 2026. This product makes full use of the unutilized parts of lemons generated as a byproduct during the gin manufacturing process.

This product is a jam that makes full use of the unused parts of lemons generated during the craft gin manufacturing process, bringing out the full charm of the ingredients.

In craft gin production, lemon peels are used as important botanicals for flavoring. On the other hand, there was a challenge in effectively utilizing the entire fruit portion remaining after peeling (*1). The distillery has set a goal of "reusing all waste generated during the manufacturing process." Amidst this, "After the Peel" was born from the search for "ways to utilize waste without discarding it.".

This product consists solely of lemon juice, pulp, pith, and sugar after peeling. No water is added, and a delicate manufacturing method is employed, solidifying the jam using only the pectin naturally present in the lemons. By carefully controlling the timing of the heating process, a soft yet appropriately textured jam has been achieved. Furthermore, through collaboration and repeated trial-and-error with processing partners, it has been commercialized as a jam that maximizes the appeal of the ingredients.

With a design that suppresses sweetness, it has resulted in a rich flavor where "sweetness, acidity, and a hint of bitterness" are harmoniously layered.

*1: Peeling refers to the process of removing the skin of the fruit. Since only the lemon peel is used as a botanical for gin, the process of carefully peeling the fruit is carried out.
