Niigata's proud edamame served as an amuse-bouche. The champagne's bubbles create a refreshing start to summer.

2. Niigata Eggplant and Ripe Tomato Ratatouille Pairing: Fermier Den'en Chardonnay 60ml

Niigata-grown eggplant and ripe tomatoes are prepared in a traditional southern French style, paired with Fermier's Den'en Chardonnay.

3. Niigata Kagayaki Farm Gold Rush Corn and Foie Gras Opera Pairing: Fermier Shine Muscat Petillant 60ml

A dish layering the rich umami of foie gras with the gentle sweetness of Gold Rush corn, a popular variety from Kagayaki Farm. The Muscat Bailey A pétillant adds a sparkling accompaniment.

4. Sautéed Sado Black Abalone with Liver Sauce Pairing: Fermier Albariño 120ml
