The white corn "Yuki no Yōsei" (Fairy of Snow) used this time is grown at "Hyakusei" Nakade Farm in Kaizuka City, Osaka Prefecture. At "Hyakusei" Nakade Farm, they are dedicated to careful farming from soil preparation to harvest, with the philosophy of "cherishing the original taste of ingredients and protecting the deliciousness and health of those who eat it."
Among them, "Yuki no Yōsei" is characterized by its soft skin, juiciness that allows it to be eaten raw, and a strong sweetness that is hard to imagine from its pure white appearance. While the sugar content of general sweet corn is said to be around 15 degrees, "Yuki no Yōsei" can exceed 20 degrees, and its sweetness has earned it the nickname "dessert of the corn world." Many people feel that "their concept of corn has changed." Its sweetness is comparable to fruit, and it is gaining attention as a memorable summer flavor that leaves an impression once tasted.
At our restaurant, to maximize its sweetness, we carefully cook each pot individually and then add an extra step of lightly grilling it to a fragrant finish.
