Sushi Sakaba Nihonichi Hommachi Store, operated by N.I Co., Ltd. (Headquarters: Yodogawa-ku, Osaka City; President: Norio Kawamura), will host a limited-time festival starting Tuesday, June 16, 2026, featuring authentic wild bluefin tuna landed at Iki Island in Nagasaki Prefecture, along with sake from Iki’s Shigeya Brewery.
The bluefin tuna used in this event was caught and landed at Go-no-ura Fishing Port on Iki Island, Nagasaki. Raised in the rich fishing grounds influenced by the Tsushima Current, this tuna is known for its deeply flavorful red meat and high-quality, sweet fat.
Surrounded by the convergence of warm and cold currents, Iki Island provides an ideal fishing environment where bluefin tuna feed abundantly, resulting in excellent flesh quality. From the robust umami of the lean meat to the refined fat of chu-toro and o-toro, each cut offers a distinct taste. The restaurant will serve the tuna as sashimi and nigiri sushi, highlighting the unique characteristics of each part.
Complementing the bluefin tuna is sake brewed by Shigeya Brewery, a local sake brewery on Iki Island. Established in 1924, Shigeya Brewery is renowned for its sake crafted using the natural terroir of Iki.
The 'Yokoyama' and 'Yokoyama Gojū' series offered during the festival are characterized by their floral aroma and refreshing acidity. These sakes enhance the sweetness of the tuna’s fat while providing a clean finish, making them an exceptional match for all cuts—from lean akami to rich o-toro. While enjoyable on their own, pairing these sakes with the bluefin tuna elevates the umami of both ingredients.
