Enjoy the Creamy Texture of Seasonal White Eggplants in a Limited-Time Offering
While our restaurant is best known for its pure domestic horse sashimi and freshly slaughtered chicken, we actively incorporate seasonal ingredients at their peak.
This time, we are using white eggplants grown at Nakanari Farm in Kashima City, Osaka Prefecture. Compared to common purple eggplants, this variety is less cultivated and rarely seen in supermarkets. To deliver the unique deliciousness only available during its peak season, we have prepared four distinct menu items that highlight the ingredient’s individuality.
White eggplants have softer flesh and higher moisture content than purple eggplants, resulting in a melt-in-the-mouth texture and delicate sweetness when cooked. Another major appeal is how their character changes with different cooking methods: frying enhances their juiciness, grilling brings out rich umami and sweetness, and charcoal grilling adds a delightful smoky aroma.
To allow our customers to enjoy the charm of white eggplants from various angles, we will serve them using different cooking techniques.
Delivering Osaka’s Seasonal Vegetables Alongside the Farmer’s Passion
Every year, our restaurant sources seasonal water eggplants from Nakanari Farm in Kashima City, Osaka Prefecture, to serve our customers.
Nakanari Farm operates under the philosophy of “valuing the natural flavor of ingredients and protecting the taste, health, and enjoyment of our customers.” The farm grows vegetables from seed and performs pollination by hand, dedicating care and effort to every step of cultivation.
We believe it is one of our roles as a restaurant to convey not only the ingredients but also the farmers’ dedication. By serving seasonal vegetables grown in Osaka, right here in Osaka, we aim to deliver the charm of Nakanari Farm’s white eggplants through our farm-to-table initiative.
