Suginomori Brewery Co., Ltd. (Narai, Shiojiri City, Nagano Prefecture; Representative Director: William Hiroshi Sandberg) has launched 'narai terra,' the first assemblage sake from suginomori brewery. This product is a blend of multiple 'narai' batches brewed since the resumption of production in 2021. By carefully combining sakes from several vintages, including the first batch, it achieves a depth and harmony that cannot be expressed in a single year. It is being released as a limited edition of 500 bottles, representing a new expression of 'narai' that layers the time of the brewery's journey. 'narai terra' is the first assemblage sake produced by suginomori brewery. Since resuming brewing in Narai-juku in 2021, the brewery has conducted small-tank fermentations, producing a total of 53 tanks of sake. This product carefully layers multiple 'narai' batches born from that journey to explore the harmony of flavors. By combining several vintages, including the first batch, a depth is created that cannot be expressed by sake from a single year. Furthermore, by layering sake brewed with different rice varieties such as Kinmon-nishiki and Sankei-nishiki, the final product achieves a flavor where each characteristic quietly harmonizes. Combining sake from different vintages and multiple rice types is a rare endeavor in the sake industry and a new challenge for us.
