To allow customers to see the eel preparation techniques that have been cultivated alongside Japanese food culture, every store is equipped with a "live kitchen." A key feature is that the cooking process is performed right before the customers' eyes, allowing them to experience the craftsmanship and the taste of freshly prepared eel.

The shops and restaurants at the new location, "Tokyo World Gate Akasaka," offer a lineup that caters to a diverse range of dining scenes. This includes the more than 10,000 office workers at Tokyo World Gate Akasaka, as well as hotel and serviced residence guests, local residents, and office workers, serving needs from daily lunches to after-work relaxation, communication with colleagues, and business dinners.

"Unagi Yondaime Kikukawa" Commitment to Eel Over 90 years since our founding, as a long-established wholesaler, we have dealt with countless eels. Through this, we have cultivated the eye to select the best eel by working backward from the ideal taste and texture. Furthermore, to maximize the natural flavor of the ingredients, we utilize a "Tateba" (storage facility) for eels, a tradition passed down and protected by our ancestors. By letting the eels rest in this facility, which draws well water from 200 meters underground, the mud is removed by the well water, eliminating any characteristic odor and refining the quality of the material.
