Nearly 50% of people ate rice flour foods, dishes, or sweets in the past year.
Among what they ate (multiple answers), "Commercially available foods/sweets using rice flour" accounted for 34.3%.
"Homemade dishes/sweets using rice flour" was 8.8%, with a higher proportion among those in their teens and twenties.

When those who ate rice flour foods, dishes, or sweets in the past year were asked about the types they ate (multiple answers), "bread" accounted for 57.4%, "cakes, baked goods," and "rice flour snacks" each around 20%, and "fried foods," "doughnuts," and "udon" each around 15%.
"Udon," "pasta," "ramen," and "rice flour snacks" were more common among men, while "bread" and "cakes, baked goods" were more common among women.

The reasons for those who ate rice flour foods, dishes, or sweets in the past year (multiple answers) were: "delicious" at 40.5%, "seems good for the body" and "like rice" each over 20%, and "good texture" at 17.5%.
"Want to live a gluten-free lifestyle, want to reduce wheat intake" and "seems good for the body" had a higher proportion among women. Also, "good texture" was higher among women in their 50s-70s.

**◆Intention to Consume Rice Flour Foods, Dishes, and Sweets**

Approximately 54% of people intend to eat rice flour foods, dishes, or sweets in the future, combining "intend to eat" and "somewhat intend to eat." This figure is high at over 70% for women in their teens and twenties, and also over 70% for those who have eaten rice flour products in the past year.
Those who do not intend to eat them (total of "do not intend to eat" and "do not really intend to eat") account for just over 10%.

**◆Types of Rice Flour Used in the Past Year**

20% of people used rice flour for cooking or other purposes in the past year. This was approximately 16% for men and approximately 26% for women.
Among the types of rice flour used (multiple answers), "for cooking/confectionery" was 11.1%, "for bread" was 5.8%, and "shiratamako (rice flour for mochi)" was 5.3%.

When people who did not use rice flour for cooking or other purposes in the past year were asked for their reasons (multiple answers), "more accustomed to wheat flour" was 29.8%, and "don't know recipes/menus using rice flour" and "expensive" were each just under 20%.
