Hayashi began his apprenticeship at 18 under Yoshihiro Murata, the 3rd-generation owner of the Kyoto ryotei 'Kikunoi,' founded in 1912. In 2004, he participated in the opening of Kikunoi's Akasaka branch as sous-chef. Later, he served as the head chef for Japanese cuisine at the Hokkaido Toyako Summit. With a mission to promote Japanese food culture, he moved to Europe in 2009. He was appointed a 'Goodwill Ambassador for Japanese Cuisine' by the Japanese government in 2018. He has served as the head chef for Japanese cuisine at numerous international conferences, including the Tokyo International Conference on African Development and the Davos Forum, and received the 'Award for Contribution to the Overseas Promotion of Japanese Cuisine' in 2020. Since 2016, he has supervised Japanese inflight meals for JAL's European flights, reforming their inflight dining experience.

Each dish, filled with vitality and created by chef Yoshiki Komi, who embodies the next generation through solid values, plays a beautiful story in a special space.

'SANKA' embodies the meaning of a 'song of gratitude to the rich nature that brings blessings.' Chef Komi transforms unknown local ingredients, through deep dialogue and collaboration with producers, into dishes overflowing with life, using rich, creative ideas unbound by the framework of French cuisine and delicate techniques.

Komi gained experience at the 2-star French restaurant 'LA TABLE de Franck Putelat' and the pinnacle of French dining, 'La Table de Joël Robuchon.' He served as sous-chef at 'Coteau,' a restaurant selected among the 'Top 100 French Restaurants,' and as head chef for fine dining at the membership-based restaurant and hotel 'LES CINQ SENS' in Nagasaki.
