The theme of this course is to depict the colors and scenes of Yamanashi's summer on each plate. We have prepared a menu that allows guests to savor Yamanashi's rich blessings along with the imagery of each region. It begins with a transparent amuse-bouche reminiscent of the clear waters of Oshino Hakkai, followed by appetizers inspired by the shojin (devotional) culture of Minobu, such as black sesame and soy milk dishes, and a refreshing cold soup combining peach and paprika. Each exquisite dish carefully brings out the unique characteristics of locally grown ingredients. A dish featuring colorful Rikushin Shingen shrimp, bringing vibrancy, is inspired by the summer fireworks illuminating Ichikawamisato. The fish dish uses Yamanashi's brand fish, served with a refreshing sauce reminiscent of the clear waters of the Fuefuki River. The main meat dish expresses the Yoshida Fire Festival. Arita beef, known for its melt-in-your-mouth texture, is prepared as yakiniku shabu, with rising flames dramatically showcasing the power of summer. From Yatsugatake corn rice to white peach dessert, we have carefully prepared a course that brings together the seasonal flavors nurtured by Yamanashi's climate in diverse expressions.
