This afternoon tea is crafted using tea from Hagimura Tea Farm, located in the Suizawa district, a scenic area in the outskirts of Yokkaichi. We have prepared unique sweets that can only be enjoyed here, including 'Matcha Macarons' filled with matcha buttercream, 'Matcha Tarts' finished with matcha ganache and kabusecha (shaded green tea) jelly, and 'Strawberry Daifuku-style' treats featuring strawberries wrapped in matcha bean paste and gyuhi (soft mochi). The theme for May and June is 'Matcha.' We have prepared an afternoon tea featuring fragrant matcha from Hagimura Tea Farm in local Yokkaichi Suizawa.
Our pastry chefs have put great care into a variety of sweets, such as the 'Matcha Tart' finished with matcha ganache and kabusecha jelly, the 'Moss Ball' featuring white ganache coated in matcha sponge crumbs, and the 'Black Sesame and Matcha Mousse' made with black sesame from Kuki Sangyo, also based in Yokkaichi. Guided by the management philosophy of 'creating and delivering delicious tea,' the tea they produce has received numerous prestigious awards, including the Minister of Agriculture, Forestry and Fisheries Award.
'Yokkaichi City Suizawa Tea' Mie Prefecture ranks 3rd in Japan for tea production, and the Suizawa district is a representative tea-producing region in Mie in terms of both history and output. Tea cultivation flourished in Suizawa due to the well-drained soil, abundant rainfall, and mild climate. In particular, it boasts the highest production volume in Japan of high-quality, flavorful kabusecha. By growing the tea under shade, the conversion of theanine—a representative umami component—into catechins is suppressed, allowing a high concentration of theanine to remain in the harvested new buds.
