With mango as the main character, it is a cold summer sweet where you can enjoy the harmony of fruits and ingredients, layered in three tiers with framboise rare cheesecake and raw gateau chocolat dough.

Uses aged cheese of the popular product 'Freshly Made Ricotta' from CHEESE STAND, which provides and sells freshly made fresh cheese handmade in a workshop in Shibuya, Tokyo, under the concept of 'Freshly made cheese to the city'. It is a familiar cheese on dining tables in Southern Italy, and you can feel the original sweetness and saltiness of ricotta, as well as the umami from aging. We combined that cheese with fresh greens, olive oil, and cacao nibs from Madagascar, characterized by the fruitiness derived from cacao.
