Minimal - Bean to Bar Chocolate -, a Japanese specialty chocolate shop operated by βace Inc. (Shibuya, Tokyo; Representative Director: Takatsugu Yamashita; https://mini-mal.tokyo/), will begin selling its spring-exclusive 'Fruit Sandwich Cake' (limited to 15 servings per day) at its Tomigaya main store starting April 1, 2026.
This new style of 'assiette dessert' (plated dessert) takes the foundation of a traditional fruit sandwich and elevates it into a richer cake.
Building upon the familiar concept of a 'fruit sandwich,' we have assembled original chocolate, fruit, genoise sponge, and sauce in an exquisite balance to create an unprecedented dessert experience to be enjoyed in-store.
We have pursued the live, fresh quality unique to plated desserts, resulting in a luxurious dish. It is a dessert-style cake that goes beyond a simple 'sandwich,' allowing you to enjoy the layering of materials.
Spring-like, light milk chocolate cream and a rich genoise made with brand-name eggs.
The star of the dish is the light-textured special chocolate cream. Within the gentle sweetness of the milk, you can detect the caramel-nut-like richness and fragrance characteristic of Haitian cacao. By incorporating mascarpone into the cream and delicately controlling the intensity of the cacao, we have achieved an exquisite balance that brings out the personality of the seasonal fruits to the fullest.
The genoise sponge used to sandwich the cream is made luxuriously with 'Hogyoku' eggs, a brand-name egg from Tanaka Farm in Saitama Prefecture. The moist, rich sponge gently wraps around the cream and fruit.
Furthermore, the plate is decorated with a special sauce that combines the vibrant acidity of Griotte cherries with a fruity milk chocolate made from Madagascar cacao. The refreshing sensation of herbs, which changes with the seasons, is added, allowing you to enjoy a shift in flavor that keeps you interested until the very last bite.

Minimal visits cacao-producing regions around the world and manufactures chocolate by hand, one by one, from high-quality cacao beans. Staying true to our origin of 'carefully and simply maximizing the best ingredients to bring out their aroma,' our team of pastry chefs, chocolatiers, and artisans—who have honed their skills at Michelin-starred restaurants and top patisseries both in Japan and abroad—work together to create Minimal's chocolates and sweets.
Regarding our cacao materials, we conduct research and provide lectures on fermentation and drying processes locally, developing flavors that meet high-quality and high-price standards together with cacao farmers. We aim for the sustainable economic independence of the cacao industry, which still bears the remnants of plantations, by providing technical support and engaging in fair and ethical trade. In 2019, we conducted a cacao survey in Nicaragua as part of a JICA ODA project.
Through our philosophy of 'subtraction' to highlight ingredients and our unique manufacturing methods, we have received 103 awards at international competitions over 10 consecutive years. We hope to deliver 'chocolate that stays in your heart'—the kind that makes you think 'I want to eat this again'—by being faithful to the basics while maintaining the freedom of thought to not be bound by tradition or specific methods, adding color to your daily life.
