Bace Co., Ltd. (Shibuya-ku, Tokyo, Representative Director: Takatsugu Yamashita), which operates the Japanese specialty chocolate store "Minimal - Bean to Bar Chocolate -", will launch the spring-limited "Fruit Sandwich Cake" (15 servings per day) at its Tomigaya flagship store starting April 1, 2026.

Based on the traditional fruit sandwich, this new style of plated dessert has been elevated into a richer cake.

Using the familiar "fruit sandwich" as a base, we have created an unprecedented dessert to be enjoyed in-store, by expertly balancing original chocolate, fruits, genoise sponge, and sauce.

This luxurious dish pursues the live and fresh feel unique to desserts. It is a cake in a dessert style that allows you to enjoy the layering of ingredients, going beyond a mere "sandwich."

Light Milk Chocolate Cream with a Spring-like Feel,

Rich Genoise Sponge Made with Brand Eggs

The star of the show is the special chocolate cream with its light texture. Amidst the gentle sweetness of milk, you can sense the caramel-nutty richness and aroma characteristic of Haitian cacao. Mascarpone cheese is also used in the cream, and by delicately controlling the cacao's presence, we have achieved an exquisite balance that maximizes the individuality of the seasonal fruits.

The genoise sponge, which sandwiches the cream, is luxuriously made with "Hogyokuran" brand eggs from Tanaka Farm in Saitama Prefecture. The moist and rich sponge gently envelops the cream and fruits.

Furthermore, a special sauce combining the vibrant tartness of griotte cherries with fruity milk chocolate made from Madagascar cacao adorns the plate. The addition of refreshing herbs, which change their expression with the seasons, allows for a delightful variation in taste that keeps you engaged until the very last bite.
