JW Marriott Hotel Tokyo (2-21-2 Takanawa, Minato-ku, Tokyo), which opened in October 2025 in the new "TAKANAWA GATEWAY CITY" in Takanawa, Tokyo, will be offering summer-limited seasonal cocktails and sweets pairing at "Ki No Bi Room," a pop-up bar located in the hotel's 30th-floor hideaway bar "4-0-3 (Four-Oh-Three)" from July 1 (Wed) to August 31 (Mon), 2026.
During this period, in addition to three types of summer-limited cocktails that leverage the unique characteristics of "Ki No Bi," crafted by "Kyoto Distillery," Japan's first gin specialty distillery, we will also offer three types of chocolate sweets created by Shigeru Nojima, the hotel's Executive Pastry Chef, inspired by the world of Ki No Bi. You can enjoy a rich mariage of cocktails and sweets in a calm and luxurious atmosphere.
A Summer-Limited Pairing Experience Weaving Together Kyoto's Craft Gin and Hotel-Made Sweets
"Ki No Bi Room" is a currently ongoing pop-up bar where you can experience the world of "Ki No Bi House," Kyoto's brand home, in Tokyo. As the second installment of our seasonal menu, which changes every two months, we will be offering three types of cocktails in July and August that incorporate ingredients evoking summer, such as red shiso, ginger, and wasabi.
This time, Shigeru has created special chocolate sweets to match each cocktail. These luxurious sweets are crafted with a skillful combination of fruits, nuts, and sablés, offering not only delightful flavors but also textural variations. You can savor an exquisite pairing experience unique to JW Marriott Hotel Tokyo, with the deep lingering notes of the cocktails.

We have prepared chocolate sweets to accompany each of the three limited cocktails. Please enjoy the mariage woven by the cocktails and sweets.
1. Cocktail: "She thought she saw paradise"
Using "Ki No Bi Kyoto Dry Gin," this cocktail is a variation of the classic "Paradise," blended with apricot and orange, and red shiso. By layering the subtle astringency of red shiso with the fragrant Darjeeling tea, it achieves a refreshing and light taste reminiscent of fruit tea.
Pairing Sweet: "Bitter Chocolate Tart"
A nama chocolate made with Jardin Bleu tea, known for its floral aroma, and bitter chocolate. A chocolate sablé provides a textural accent.
2. Cocktail: "Natsugasumi ~Summer Haze~"
An arrangement of Gin Sling that enhances the rich sweetness of brown sugar in "Ki No TOU Kyoto Old Tom Gin Style" with the umami of Yamabushitake mushrooms and the refreshing aroma of ginger. It offers a cool taste where sweetness, umami, and gentle spice notes overlap. Enjoy the gentle, spreading aftertaste, like the haze that drifts softly in the summer air.
Pairing Sweet: "Milk Chocolate and Caramel Tart"
This dessert features a smooth milk chocolate cream and crispy chocolate sablé, layered with caramel cream and salt, creating a perfect harmony of sweet and salty flavors.
3. Cocktail: "Tokyo Modern"
This is a Japanese-Western fusion twist cocktail inspired by Charlie Chaplin, known as the "King of Comedy." Based on the pleasant acidity and umami of "Ki No Ume Kyoto Plum & Berry Liqueur," it features wasabi as an accent, and uses caramel popcorn and cola, which were popular movie snacks. With a sweet and sour base, the spiciness of wasabi and the unique sweetness of caramel popcorn create a complex yet playful drink.
Pairing Sweet: "Stone Fruit Chocolate"
Dried apricots and dried plums coated in milk chocolate. Each is paired with pistachios and almonds respectively.
These menus will also be available at "JW Bar" and "JW Lounge" in addition to "Ki No Bi Room." Sweets can also be ordered individually.

"Ki No Bi Room" is a pop-up bar where you can experience the world of "Ki No Bi House," the brand home located in Kyoto. It is available at our hotel's "4-0-3" from May 13, 2026, until late October. Executive Pastry Chef Shigeru Nojima
Began his career as a pastry chef in 1990. Since then, he has dedicated over 30 years to creating sweets and nurturing teams at luxury hotels both in Japan and abroad. He excels at delicate techniques that fuse classic and modern styles, and at expressing seasonal ingredients. He has been involved in the establishment and supervision of pastry departments at multiple hotels and has also served as Executive Chef, contributing significantly to the overall quality improvement of hotel food and beverage facilities. He represented Japan in the world pastry competition "Coupe du Monde de la Pâtisserie," earning international recognition. In 2003, he achieved an overall second-place finish, demonstrating his widely acknowledged skills both domestically and internationally. He has served as Executive Pastry Chef at JW Marriott Hotel Tokyo since 2024. Aiming to fuse artistry and hospitality, he provides guests with a unique and unparalleled sweets experience.
About Pop-Up Bar "4-0-3 (Four-Oh-Three)"
"4-0-3," a hideaway bar on the 30th floor of the hotel, is named after the internet error code "403." It offers unique experiences through collaborations with sake breweries and wineries. The walls feature bold art inspired by the National Treasure "Choju-jinbutsu-giga," known as Japan's oldest manga, with playful adult touches not present in the original work.
