The sweets menu includes five types, such as "Coconut Mango Mousse," which features a sweet and sour mango compote hidden within a light and fluffy coconut mousse, and "Miyazaki Mango Chocolate Tart," beautifully adorned with Miyazaki mangoes like a flower. Pastry Sous Chef Fujita meticulously crafts each item, offering a vibrant taste perfect for early summer.
The savories menu also features five types that allow guests to enjoy the sweetness and aroma of mangoes in various approaches, such such as a dish combining mango blancmange with prosciutto and ricotta cheese, and a refreshing appetizer of marinated shrimp and coriander with mango salsa. After honing his skills at luxury hotels and renowned patisseries in Japan, he joined the pastry team at JW Marriott Hotel Nara in 2020, coinciding with its opening. As Pastry Sous Chef, he now oversees the creation of all desserts for the hotel's afternoon tea, restaurants, and pastry shop.
His motto is to "express Nara's rich nature and history as a story on a plate," and he is highly regarded for his careful selection of ingredients, valuing connections with local producers, such as using matcha from Kamikubo Tea Garden and rare local fruits.
