From the kitchen, we have prepared a course suitable for this season, as spring transitions to summer. Seasonal striped jack will be served as a tart paired with fresh beets. Artichokes, also in season, will be prepared as light beignets with caviar. Fresh fish will be accompanied by pineapple, and grilled beef fillet by spring beans.

Enjoy these six special dishes, a unique moment where the remnants of spring and the scent of early summer intertwine.

Three types of cocktails are available for pairing. The "Port Highball," made with Ao, umami from salted kelp tincture, and a light finish with soda, offers a refreshing taste reminiscent of the port city of Yokohama.

The "Yokohama Clover Club" combines Ao with the elegant aroma of rose hibiscus tea and the acidity of lime, accented with dried raspberries.

The "Oriental Smoked Fashioned" layers Ao with maple and cherry bitters, and is garnished with peat-smoked cherries, offering a deep, smoky flavor. All are whisky cocktails designed to harmonize with the savory aroma of firewood-grilled dishes, perfect for a jazz night.
