Tasting Notes: The wine displays a radiant golden hue. Aromas of lychee, apricot, stewed yellow fruits, and white flowers unfold with elegance. On the palate, it is smooth and rich, with concentrated sweetness reminiscent of yellow peach and ripe apple, balanced by firm acidity that harmonizes with the sweetness and extends into a long, lingering finish. This sweet wine uniquely combines the concentration of the kryo-extraction method with refined elegance. It pairs exceptionally well with blue cheese, where its gentle sweetness and delicate acidity soften the saltiness and umami, enhancing the cheese’s richness and leaving a pleasant aftertaste.

2025 Vintage Report

The spring of 2025 was warm, similar to 2024, leading to earlier-than-usual budbreak. However, temperature fluctuations caused some variability in budbreak timing across varieties. The most notable weather feature of 2025 was the low rainfall—every month except May received below-average precipitation. Particularly in August, rainfall was only 50–70mm, less than half the average, and temperatures were approximately +2°C above normal, resulting in a very hot and dry growing season.

The Shinshu Riesling grapes were harvested on September 15. Although the harvest occurred earlier than usual, the grapes achieved excellent balance in sugar and acidity.

About Shinshu Riesling

Shinshu Riesling is a proprietary grape variety developed by Manns Wine through crossbreeding Riesling (father) and Chardonnay (mother), registered in 1991. It combines the aromatic intensity of Riesling with the roundness of Chardonnay, making it ideal for both sweet and dry wine styles, each expressing a distinctive character.

About Kryo-Extraction

'Kryo-Extraction' is a winemaking technique where harvested grapes are frozen, and juice is extracted as they thaw. The freezing process ruptures cell walls in the grape skins, enhancing the extraction of aromatic compounds and resulting in exceptionally flavorful juice. This labor-intensive method yields only about one-third of the original grape weight in juice. The resulting wine is a luxurious, intensely concentrated, very sweet wine that fully expresses the unique characteristics of the grape variety.
