Making At-Home Draft Beer and Gyoza Tastier Through "Dishwashing"! New 'CHARMY Magica' Series Removes "Invisible Dirt" to Improve the Appearance of Beer and Gyoza
Lion Corporation collaborated with Sapporo Beer and Ajinomoto Frozen Foods to prove that its 'CHARMY Magica' dishwashing liquid removes invisible dirt, improving draft beer foam and preventing gyoza from sticking to pans.

Lion Corporation (Representative Director, President and Executive Officer: Masayuki Takemori) aims to contribute to "making the entire food culture—from cooking to dining to dishwashing—more enjoyable" from a cleaning perspective through its dishwashing liquid "CHARMY Magica," and is advancing technological development in collaboration with food manufacturers. Recently, focusing on draft beer glasses and frying pans used for gyoza, we found that "invisible dirt" on both compromises their appetizing appearance, and confirmed the cleaning efficacy of a new dishwashing liquid that removes this dirt.
These joint verifications were realized through collaborations with Sapporo Breweries Ltd. (hereinafter Sapporo Beer) and Ajinomoto Frozen Foods Co., Inc. (hereinafter Ajinomoto Frozen Foods). In the collaboration with Sapporo Beer, we verified the impact of "water stains," an "invisible dirt" on glasses, on the quality of draft beer foam, and revealed that our new dishwashing liquid, "CHARMY Magica Quick Dry + (Plus) Crisp Sterilization," makes it difficult for water stains to adhere, thereby improving the foam quality of draft beer. Furthermore, in the collaboration with Ajinomoto Frozen Foods, while proteins, starches, and "lipids (*)" are cited as "invisible dirt" on frying pans, we discovered the possibility that not only proteins but also "lipids (*)" contribute to gyoza sticking to the pan. Additionally, we confirmed that by washing away these stains with our new dishwashing liquid, "CHARMY Magica Enzyme + (Plus)," which newly incorporates lipid-degrading enzymes for easy removal, sticking can be reduced, resulting in a delicious-looking (beautifully browned) finish.
(*) Oils that slightly accumulate through repeated use of a frying pan (different from cooking oil).
■ Purpose of the Collaborative Projects
Purpose: To deliver a "high-quality draft beer experience" to consumers, we explored the causes affecting the quality of draft beer foam and searched for the optimal cleaning method, starting joint research in May 2024. We have promoted this as a new value creation project by fusing Sapporo Beer's cultivated "commitment to draft beer quality" with our cultivated "glass cleaning technology."
Purpose: To deliver a "delicious winged gyoza experience" to consumers, we clarified the factors causing sticking to the frying pan when cooking gyoza and searched for the optimal cleaning method, starting joint research in November 2023. As the "Frozen Gyoza Frying Pan Challenge Project," we have continued verification from the perspective of "dirt sticking to frying pans and cleaning."
■ Results of the Joint Verification on Beer Glasses and Frying Pans
1. Initiative with Sapporo Beer: Regarding "Invisible Dirt" on Glasses
We investigated the impact of "lipid," "protein," and "water stain" dirt adhering to glasses on the appearance (visual quality) of draft beer, such as foaming and foam retention, and the cleaning efficacy of our dishwashing liquid against these stains.
(1) Impact of "Invisible Dirt" Remaining on Glasses on the Appearance (Visual Quality) of Draft Beer
(Verified using glasses provided by Sapporo Beer that resulted in poor draft beer appearance when poured)
First, as a result of our investigation into glasses deemed to have poor draft beer appearance (Figure 1), we found that a lot of "water stains" remained on the glasses (Figure 2).
Figure 1: Glass provided by Sapporo Beer Figure 2: Relationship between draft beer visual quality and the amount of "water stains" (calcium). Test condition: Measured the amount of "water stains" (calcium) from the glass.
Next, we prepared a glass without "water stains" and a glass with "water stains" attached, and compared the amount of "foaming on the wall" of the glasses. The key to the delicious appearance of draft beer is to suppress the "foaming on the wall" of the glass. "Foaming on the wall" stimulates the layer of fine, soft foam (frosty mist) and destroys the layer of fine foam, degrading the visual quality. While almost no "foaming on the wall" was observed in the glass without "water stains," "foaming on the wall" occurred in the glass with "water stains" attached (Figure 3). In other words, we found that if "water stains" remain on the glass, it worsens the visual quality of draft beer.
Figure 3: Evaluating the amount of foaming on the wall. Test condition: Placed glasses and hard water in a dishwasher, washed twice on a standard course to artificially create glasses with "water stains." Poured beer into the prepared glasses and visually confirmed the state of foaming (Evaluation criteria - 〇: No foaming from the glass wall, ×: Foaming from the glass wall present).
(2) Cleaning Efficacy by Our Dishwashing Liquid
We verified that the new "CHARMY Magica" significantly prevents water stains.
