On February 14, 2026, Hitomi Kawasaki, originally from Sendai City, Miyagi Prefecture, opened a stone oven pizza food truck, "chako kitchen," in Tamura City, Fukushima Prefecture! Ms. Kawasaki participated in a "Food Truck Opening Seminar" held in Sendai City by Legare Co., Ltd. (Headquarters: 1995 Shimookamoto-cho, Utsunomiya City, Tochigi Prefecture; CEO: Shingo Usui; hereinafter "Legare") in March 2025. Subsequently, she proceeded with preparations for the opening with the support of Legare. Furthermore, utilizing the "Fukushima 12 Municipalities Entrepreneurship Support Grant" system, she started her business by moving alone to Tamura City, Fukushima. It became a new challenge in a new land.

Reason for opening a food truck - The challenge of a housewife who loves cooking In her previous job, Ms. Kawasaki worked part-time as a registered salesperson at a pharmacy. Since she loved cooking and felt joy when people said her food was "delicious," she had been thinking about eventually working in a culinary-related job. Around the time her child-rearing settled down and she wanted to fulfill her ambitions in her future life, she served her specialty curry at her sister's house. Her sister's words, "It's so delicious, why don't you try running a curry food truck?" were the initial trigger. Being active and fond of moving around to various places, Ms. Kawasaki felt a food truck was perfect for her as she researched it, and immediately began gathering information. Through this process, she found and participated in Legare's food truck opening seminar. At the time, she was still planning to start a curry food truck, but through the pizza baking experience and tasting at the seminar, her feelings changed, deciding she wanted to do a pizza food truck! From there, she proceeded with financial preparations and technical training for pizza. Legare provided comprehensive support toward her opening, from vehicle manufacturing to providing pizza cooking techniques and on-site training. During this preparation period, we learned a lot every time from Ms. Kawasaki's personality, positive attitude, and light footwork.
