Kubara Honke Group (Hisayama-cho, Kasuya-gun, Fukuoka Prefecture; Company President: Tetsuji Kawabe) will open 'Kyoto Gion Kayanoya' in Kyoto's Gion district in June 2026. As its flagship store in the Kansai region, it aims to become a new hub for disseminating Japanese food culture from the historic city of Kyoto.
About Kyoto Gion Kayanoya
'Kyoto Gion Kayanoya' is a new flagship store where visitors can experience dashi culture with all five senses. On the first floor, in addition to Kyoto-exclusive products, carefully selected tableware and tools that adorn everyday 'ichiju-issai' (one soup, one side dish) will be available. On the second floor, Fukuoka's 'Oryori Kayanoya' will open its first branch outside Fukuoka. During lunchtime, customers can enjoy udon made with a focus on dashi, and in the evening, a new menu item, 'Kyo Jukkokunabe,' a Kyoto-style arrangement of the famous 'Jukkokunabe,' will be served. Dashi workshops will also be held.
1st Floor: Kyoto-exclusive 'Flavors' and 'Tools' for daily life
The Kyoto Gion store's exclusive product lineup includes 'Dashi Chazuke' and 'Nyumen' that can be enjoyed by simply adding hot water, utilizing Kyoto-like ingredients such as shibazuke (pickled vegetables) and yuba (tofu skin), perfect as souvenirs.
Additionally, tableware and tools themed around 'ichiju-issai' are available. From practical items like chopsticks and lacquerware bowls to exquisite crafts showcasing the skills of artisans who preserve history, a wide array of items for daily life are on display.
In particular, small plates and mamezara (tiny plates) that add color and playfulness to the dining table include limited-edition items from the prestigious Imaemon Kiln, a holder of Important Intangible Cultural Property, and works by ceramic artist Makoto Kagoshima, who is active both in Japan and internationally, as well as antique pieces. The selection primarily features kilns from Arita and Imari.

2nd Floor: 'Oryori Kayanoya Kyoto Branch' and 'Dashi Experience' to satisfy all five senses
The second floor is a space where visitors can deeply and intimately experience the charm of dashi. As a branch of Fukuoka's 'Oryori Kayanoya,' which is the root of the Kayanoya brand, chefs will prepare dishes combining dashi with carefully selected Kyoto ingredients. The lunch menu features 'udon,' a noodle dish popular worldwide, using Kyoto-specific ingredients such as 'Kujo negi' (Kyoto green onions) and 'Kyo-age' (Kyoto fried tofu), served in a specially blended dashi. Authentic flavors can be savored along with seasonal Kyoto vegetable tempura. For dinner, in addition to the 'Kyo Jukkokunabe,' a Kyoto-style arrangement of the signature 'Jukkokunabe' previously offered at Fukuoka's 'Oryori Kayanoya,' now with kombu dashi and black beans, a unique menu item 'Jukkokko Hakko Nabe' (Ten-grain Fermented Hot Pot) utilizing Kyoto's culinary wisdom has been prepared.
Furthermore, dashi workshops will be held in the adjacent event space (paid, reservation-only). Through these workshops, participants can experience the differences in taste and aroma of various dashi ingredients and the subtlety of their combinations with all five senses, discovering the true charm and depth of dashi itself.
