The Kobe Industry and Labor Support Center is pleased to announce the development of a retort version of 'THE CURRY OF KOBE,' a Kobe Selection certified product that upcycles unused Kobe beef fat resources.

Developed jointly by Compass Co., Ltd. (based in Chuo-ku, Kobe), which operates 'Teppanyaki Kobe FUJI,' and Canyon Spice Co., Ltd. (Sennan City, Osaka), the product will be available for pre-sale on the 'Makuake' crowdfunding service.

### Overview
This product was developed focusing on 'beef fat,' which has not been fully utilized in the distribution process of Kobe beef, one of Japan's top three Wagyu brands.

Compass Co., Ltd. obtained an 'Edible Oil and Fat Manufacturing' license specifically for this project to extract beef oil from Kobe beef fat in-house. By using this oil in the curry roux and processing the 'beef fat cracklings' remaining after extraction along with chunks of meat, they achieved an unprecedented depth of flavor.

As a member of the Kobe Beef Marketing & Distribution Promotion Association, the company promotes the 'democratization of Kobe beef.' They aim to contribute to regional sustainability (SDGs) while delivering the exquisite taste of Kobe beef to consumers at an accessible price.

### Product Features
1. **Proprietary Kobe Beef Oil**: Using in-house manufactured oil in the roux allows for a rich beef curry flavor even when only vegetables are added for cooking. This retort version brings specialty-shop quality to the home.
2. **Upcycling Challenge**: Effectively utilizing resources that were previously undervalued. The project aims to contribute to local livestock farmers and reduce environmental impact by using 'every drop of oil and every piece of fat.'
3. **Certified for 'Kobe Selection 2026'**: The original curry roux passed rigorous screening by experts and buyers to be certified. Now, the long-awaited retort version is complete.

### Sales and Future Plans
- **Pre-sale**: Starting April 23, 2026, on Makuake.
- **General Sale**: Scheduled for mid-June 2026 via the company’s e-commerce site and stores in Kobe.
